Recipe – Chocolate Hazelnut Cake

I’ve had this recipe for a few years now but haven’t made it in a very long time. I had all the ingredients this weekend so thought I’d give it a try. I’ve forgotten how good it is.

250g dark cooking chocolate
125g butter
½ cup castor sugar
¼ cup strong coffee (I dissolve 1 tsp of instant coffee in ¼ boiling water)
4 eggs, separated
125g ground hazelnuts

Preheat oven at 170°C
Combine chocolate, butter, sugar and coffee in a saucepan and stir over a low heat.
Stir in egg yolks and hazelnuts
Whisk egg whites until firm and fold gently through the chocolate mixture.
Bake for 1 hour.

Chocolate Ganache Icing

250g dark cooking chocolate
1/3 cup cream

Combine chocolate and cream in a heatproof bowl over a saucepan of simmering water. Stir with a metal spoon until smooth. Remove bowl from heat and let cool. Spread over cold cake.
