Lately, my personal life has definitely taken over from my work life. My eldest girl started school and I’m in the middle of a hectic training schedule for the Canberra Marathon. Yep, I’m going to run 42km in 7 weeks time. Crazy? Probably. Determined? Definitely.
So my business has definitely taken a back seat for a while. I love to bake for my family and have tried to add some little homemade treats into the girls’ lunch boxes. Last week I tried this recipe for white chocolate and berry muffins and they were an instant success. The girls love them and they freeze well so we can take them out as needed.
60 grams butter
2 cups of self raising flour
2/3 cup sugar
3/4 cup low fat milk
1 cup white chocolate chips
1 1/4 cups of frozen mixed berries
Preheat oven to 200C
Line 36 mini muffin tins with mini patty papers
Melt butter in microwave and allow to cool
Add combined flour and sugar. Then add egg and milk and stir with a wooden spoon.
Gradually add choc chips and berries and slowly stir until just combined.
Spoon into the papers
Bake for 20 minutes or until browned
