NSW Central Coast Photographer – Orange Poppyseed Biscuits

A beautiful neighbour recently shared this recipe with me and it was an instant favourite with 3/4 of our household (all except for Alice who doesn’t like them). A perfect lunchbox treat for the rest of us. I plan on trying some different varieties with the basic biscuit dough, Alice says she’d like to try them with jam instead of the orange and poppyseeds. There are endless possibilities.

185g softened butter
¾ cup caster sugar
1 teaspoon vanilla extract
1 egg
2 cups plain flour
Zest of 2 oranges
Poppyseeds (I didn’t measure, I just kept adding until it looked right)

Preheat oven to 180°C/160°C fan forced. Line baking trays with baking paper.

Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add egg and beat until combined. Sift flour over butter mixture. Add zest of 2 oranges and poppyseeds. Using a wooden spoon, stir to combine. Roll the dough out on a lightly floured surface and cut shapes. Place on baking trays and cook for around 15 minutes or until golden.
